Dear Aquinas,
I’ve been trying to start making my own lunches for school, but I haven’t found any good recipes yet. I don’t have much time in the mornings, but I do have some time in the evenings to prepare. I’m sick of eating sandwiches and would like a meal that will keep me full and energized throughout the day. I was wondering if you can give me some quick and easy recipes for lunch!

Dear Bridget,
Having a good lunch can change your whole mood and set you on a great track for the day, so I understand your wish for some truly good recipes. Sandwiches can definitely be boring, and to be honest, they aren’t that filling or nutritious either. Since you mentioned having time in the evening, I would recommend for you to meal prep on Sunday night for the whole school week. You can cook large portions of chicken, salmon, or any other protein that you like. To balance the meals out, add some cooked veggies and maybe rice or potatoes. Meals like these would leave you full and energized, and most importantly, they will taste amazing!
Until the next questions,
Aquinas
